I’m not a big drinker…but I do enjoy a glass or two every now and again! So when I had a bottle of Southern Comfort lying around I knew I would have to find a different use for it! As you all know my skills lie in crafting and baking, with baking while crafting coming in in third place!! So I stuck to what I know and created this Southern Comfort Cupcake Recipe for you all to try out…you could also adapt the recipe and make it into a Southern Comfort Cake!
250g softened butter
250g caster sugar
5 medium eggs (or 4 large ones)
110g self-raising flour
1tsp baking powder
2tbsp cocoa powder, the richer chocolate content the better
For the icing:
250g rich dark chocolate
250g softened butter
180g icing sugar
Remember to always preheat the oven first to 180C or Gas Mark 4. Line a muffin/cupcake tray with baking cases.
Beat the butter and sugar together until light and fluffy, gradually adding the eggs, beating and then sifting in the flour, baking powder and cocoa.
Add the Southern Comfort to taste. (not too much or you’ll be wasted!)
If you have a cake like dropping consistency great! If not add a little milk to thin it out slightly and then add to the baking cases.
Bake in the oven for 15-20 minutes or until you can stick a skewer in and have it come out clean. Leave to cool.
Melt your chocolate over a pan of hot water.
Meanwhile whisk your icing sugar and butter together until fluffy. Remember to stir in your icing sugar gradually so you don’t end up in a cloud of white! When done, add the chocolate, stir in and then add some more Southern Comfort. I would recommend just 2-3tbsp depending on your taste.
Ice your cakes as normal and decorate as you wish…maybe with a glass of Southern Comfort 😉
